Holiday Baking: Pretzel Dough Rolls

Topped with Italian herbs seasoning and garlic salt. Garlic butter baked inside the rolls.

Success!

Adapted from this recipe, only difference is that I used 1/2 cup whole wheat flour, and took it out of the oven with 3 minutes left on the timer to buttered+season, then put it back in the oven. (Also, clearly this this not a pretzel-shaped thing haha)

Last bits of autumn.

Red Velvet with Honey Cream Filling

Honey Cream Filling:

  • 1 egg yolk
  • 2 tbsp. granulated sugar
  • 1 1/2 tbsp. milk
  • 3 tbsp. butter, at room temperature
  • 1 1/2 tbsp. honey
  • 1/4 c. cream cheese frosting

Omgness. The filling was so good. But tbh it was just a mix of all the leftover ingredients I had from making macarons the previous day +project left over cream cheese frosting.

Earl Grey Macarons with Honey Cream filling

Over this winter break, I finally decided to take a swing at making macaron with the help of an experienced friend. Zero cracks baby ;D secret? Over slightly ajar during the baking process. (the shells were mostly hollow though, sadly, due to my poor piping)

Happy Winter Semester to all students!

Cranberry Oat Bar

Right around Thanksgiving, my mother stocked up on fresh cranberries and begun mass producing her own no-sugar-added cranberry jam. In my opinion, it’s extremely sour—in hers, what’s natural tastes best.

Anyways, Edmonton is buried in snow today. After shopping with C, I had a craving for something toasty—dug up this recipe I’ve saved up for a long time! It’s ridiculously easy and good.

The “Oat” Part
1
& 1/2 Cup whole wheat flour
1 & 1/2 Cup oats
1/2 Cup brown sugar
1 tbsp raw honey
1/2 Cup melted butter (original recipe asked for 3/2 Cup! Totally unnecessary)
1 tsp baking powder

The “Cranberry” Part
3/4 Cup cranberry jam
(EDIT: made it again, with 1+1/2 Cups cranberry and oh man, so good)
1 tbsp raw honey

 Try it out :)!

-E loving winter (despite the snow…)
